CINNAMON ROLLS |

My family celebrates holidays and birthdays with these yummy, gooey cinnamon rolls. I bake them fresh on the eve of our birthdays and then at midnight, when our birthday's arrive, we sing "Happy Birthday" and enjoy warm and delicious cinnamon rolls.
INGREDIENTS: 2 yeast packets 1/2 cup warm water 1/4 cup sugar 1/4 lb melted margarine 1 1/2 cup scalded milk 2 eggs 1/2 cup sugar 2 tsp. salt.
DIRECTIONS:
In a small bowl, dissolve 1/4 cup of sugar in 1/2 cup of warm water and add 2 packets of dry yeast. Stir the ingredients and set aside. In a 1 quart pan, melt 1/4 lb of margarine. Add 1 1/2 cup of milk and stir it over the burner until it gives off steam (no need to boil). Add 1/2 cup of sugar and 2 tsp. of salt and dissolve them. Pour the mixture into a metal mixing bowl. Let the mixture cool and then add 2 eggs and beat with a mixer. Now add the yeast preparation and mix again.
Add 6-7 cups of flour (more if needed) and kneed it into the dough. Make it into a big ball and let it rise (dough should double in size).
Melt a stick of margarine and pour it into a bowl. In another bowl mix a cup of sugar with cinnamon until the mixture is light brown.
Punch the dough down. Pull off a glob of dough about the size of a ping pong ball. Pull it into a long rope or roll it between your palms until it is about four inches long. Dip it into the melted margarine and then roll it in the sugar and cinnamon mixture. Tie the coated dough into a knot and place it in a 9" circular cake pan.
Each pan will hold about 12 - 13 rolls. Let the rolls rise and then bake them for 15 minutes at 350 degrees. Pull the rolls from the oven and let them cool.
Store them in gallon size Ziploc bags. Keep extra rolls fresh in the freezer. Let them defrost and microwave each roll for 10 seconds before serving them. Yum! You'll be sad when they've all been eaten.
