Peppermint Holiday Ice Cream Dessert


This is another family favorite that's sure to be devoured at your next holiday dinner or party! Brace yourself to hear your guests ask, "Can I have another piece?" In fact, you might want to make an extra batch and hide it in your freezer to insure that you'll get to enjoy it, too.

This recipe is for a 9" x 9" x 2" pan
(for a 9" x 13" pan, double crust & ice cream)

INGREDIENTS:

1 1/2 cup of vanilla wafers
4 tsp margarine
1 quart of peppermint ice cream
1/2 cup of margarine
2 squares of unsweetened chocolate
1 1/2 cup of confectioners sugar
1 tsp vanilla
3 egg whites

CRUMB CRUST:

1 1/2 cup of vanilla wafers (28 wafers)
**Save some wafer crumbs for topping if you wish.
4T margarine softened. Work together with a fork. Press into pan.

SPREAD 1 quart of peppermint ice cream (softened) over crust & refreeze.

MELT: 1/2 cup of margarine, 2 squares of unsweetened chocolate, 1 1/2 cups of confectioners sugar and 1 tsp of vanilla. Let it cool.

Beat 3 egg whites until they are stiff. Fold chocolate mixture into egg whites.

Spread chocolate topping over the peppermint ice cream. Sprinkle remaining vanilla wafer crumbs over the top and freeze.

Cut square servings from the pan and serve them to your drooling guests and family.
