Sour Cream Coffee Cake |

My peeps love this delicious coffee cake and I bet that you will love it, too! It's moist, sweet, textured and tangy. Serve this one for mother's day, or father's day, or even kid's day!
Blend the following ingredients with a mixer: 1 cup oleo (two sticks of margarine) 2 cups sugar (1 & 1/2 cup of granulated sugar & 1/2 cup of brown sugar) 2 eggs 1/2 tsp. vanilla
Fold in: 1 cup of sour cream
Stir in: 2 cups flour 1 tsp. baking powder 1/4 tsp. salt (do not over beat the batter or you will lose texture)
Spoon half of the batter into a greased angel food cake pan. Topping: 1/2 cup chopped pecans 1/2 tsp. cinnamon 3 T. brown sugar
Sprinkle half of the topping over half of the batter. Add the remaining batter to the cake pan and sprinkle the remainder of the topping over it. Bake at 350 degrees for 45 to 50 minutes. Cool on a rack before removing from the pan. Serve with coffee, fruit and a smile.
