Tortellini Soup


This soup is so good that my son even likes it!

Ingredients:

• 2-3 garlic cloves (I cheat and use chopped garlic from a jar)
• 10 oz fresh or frozen chopped organic spinach (I use frozen)
• 16 oz can of diced organic tomatoes
• 32 oz vegetable broth
• 19 oz package of Rosetto frozen tortellini
• mozzarella cheese - shredded

Saute garlic in 2 tbs olive oil. Add spanach and saute until wilted. Add tomatoes and broth and bring to a boil. Then reduce heat to a simmer. After 15 minutes, add the tortellini.

Soup is ready when tortellini floats. Pour the soup into a bowl and sprinkle shredded mozzarella cheese over the top of it.

We like to buy freshly baked seeded baguettes and dip the bread into the soup broth. Yumm! This soup goes well with a glass of red wine, too.
